This salad is as much fun to make as it is to eat, with springy, spicy coils of crunchy cucumber in a highly seasoned dressing. The nifty helix effect is achieved by placing two chopsticks alongside the cucumbers before cutting them to prevent the knife from going all the way through; however, if you are intimidated by the fancy knifework, it will taste just as good with the cucumbers sliced into chunky rounds.
