Stir-fry meals are great go-to dishes for busy weeknights. Once you’ve mastered a few different recipes, you can knock out a tasty, healthy and satisfying meal in minutes using whatever you’ve got left in the fridge! This recipe uses soba noodles, but glass, rice, udon or whole-wheat noodles work too. And you can always use peanuts instead of cashews, which are usually pricier.

102-year-old doctor who still works shares her simple tips for a happy, long life |
As a physician and holistic medicine pioneer, Dr. Gladys McGarey has plenty of wisdom to share after a long life that’s provided lots of joy, but also many setbacks along the way. She’s a cancer survivor, endured the death of a daughter and went through a divorce when she was almost 70.
Her advice for getting past such setbacks?
“You just don’t get stuck in them. It’s a matter of choice: What do I choose? I chose not to be stuck in the pain and suffering. It hurt and I didn’t like it,” McGarey says. “There comes a point where it’s just not worth my energy to spend any more time on that. I’ve got the energy to do something that’s creative and pull myself out of that and work forward.” At 102 she is still working as a consulting doctor, exercising daily and living mostly independently at her home in Scottsdale, Arizona.
