Chef notes

Comfort food comes in many forms, but baked pasta dishes are always at the top of the list. Anything saucy, bubbly and cheesy is a surefire way to add a touch of coziness to the dinner table. Maybe lasagna is your comfort food of choice, but you don’t have the energy to spend your time assembling layer after layer of noodles, sauce and cheese. In that case, this sheet-pan lasagna might be the comforting compromise you’ve been looking for — especially if you and your family find yourselves fighting over the crispy edge pieces.

This lasagna recipe is the polar opposite of what you’re probably used to when it comes to lasagna. The usual layering process takes a lot of time, but by tossing everything together on a rimmed baking sheet, you get all of the same flavors with just a few minutes of prep. And the components are much the same — lasagna noodles, a hearty meat and tomato sauce, mozzarella cheese and a spinach-ricotta mixture.

To ensure that this dish is as delicious as possible, we use lots of ingredients that pack a flavorful punch. Fresh garlic and Calabrian chili paste flavor the spinach and ricotta mixture, while jarred marinara sauce is enhanced with sautéed red onion and golden brown crumbles of spicy, fatty Italian sausage. And instead of using whole lasagna noodles, snap them into approximately 2-inch pieces to make them bite-sized.

Preparing the components is the most work you’ll do with this recipe. Once everything is ready to go, just pour the pasta and meat sauce mixture onto the sheet pan, sprinkle with more mozzarella cheese, dollop with the ricotta and bake.

Technique tip: Feel free to assemble this ahead of time and refrigerate until it's time to serve, then pop it in the oven when it's time to eat.
