Nothing beats a great sandwich! It allows you to combine great flavors and textures so you can get the perfect bite. My version of a chicken cutlet sandwich has both sweet and hot peppers, as well as sharp and mild cheese to balance everything out.
Technique tip: The breading can be made ahead of time and stored in an airtight container at room temperature for up to 5 days. The chicken can be breaded up to one day in advance and kept refrigerated.
Swap options: You can use chicken thighs if preferred or try pork cutlets. Use 1/2 cup of Parmesan or 1/2 cup of pecorino if you prefer for the breading mix, or you can omit the cheese altogether.
