This recipe reminds me of taking my wife out on a date one time when we had mussels. She raved about the restaurant's mussels so much that I got a little jealous. (They were excellent, though.) So, I made her these the next week as a surprise and regained my title as her mussel king.

Technique tip: Make sure to clean and debeard the mussels. Before cooking them, make sure all mussels are closed. If you find some that aren't closed, tap the shell (this will normally make them close), but if the mussel still doesn't close, discard it. After cooking, discard any mussels that haven't opened.
