I went to college outside of Cincinnati, at Miami University in Oxford, Ohio, and worked at Skyline Chili. Cincinnati-style chili will always hold a special place in my heart!

This sauce can be used on hot dogs, piled with cheese for a "cheese coney" and it's also great as a burrito filling.

Technique tip: I know it seems strange to not brown the beef or sauté the onions, but this is what makes the texture of the sauce. The beef will be very fine this way and super tender. It is a crucial part of the recipe. This sauce also freezes perfectly! Be sure to use a fresh block of cheddar and grate it yourself. It is so much better than the bagged shredded cheese for this recipe.
