Plantains are such an underutilized food, but they're so delicious! This dish pairs my love of everything jerk with one my favorite comfort foods: pancakes. Ripe plantain, nutmeg and jerk blend seamlessly to create the most comforting breakfast bite. The perfect combo of sweet and spicy, this dish is a unique, Caribbean-inspired take on pancakes.

Technique tip: When buying plantains, look for ones that are overly ripe — the more yellow with dark spots, the better. These will be sweeter and will add better flavor to the dish. Keep your frying pan on low heat; you don't want to burn your pancakes before they're fully cooked.

Swap option: You can swap the milk out for your favorite plant-based milk. When cooking the pancakes, you can use butter instead of oil, but make sure to keep your heat low so you don't burn the butter.
